BERRY CAKE WITHOUT BAKING

 

From the specified number of ingredients will be a cake with a diameter of 20 cm, 10-12 servings.

Ingredients:

Basis:

Sugar cookies-125 g
Butter (melt) — 65 g

Layers with mascarpone:

Gelatin-12 g
Cold water-60 ml

BERRY CAKE WITHOUT BAKING

Mascarpone, room temperature 375g
Powdered sugar-110 g
Lime zest-1 tablespoon
Fat cream from 30% — 300 ml
Fresh lime juice-100 ml
Basil leaves (finely chopped) — 2 tablespoons.
Berries (large cut) — 180 g

Poached strawberries:

Strawberry liqueur or water-2 tablespoons
Strawberry jam-80 g
Lime juice-1 tablespoon
Basil-1 bunch
Fresh strawberries (cut in half or quarter) — 250 g

Decoration:

Fresh berries-100 g
Fresh Basil-1 stem

Preparation:

1. Grease the base of the split mold with a diameter of 20 cm with vegetable oil, lay the bottom with parchment.
2. In a food processor or using a rolling pin to grind cookies, add melted butter, stir until the oil is evenly distributed and the formation of small crumbs. Put the resulting mass in a prepared form, tightly compacted and smooth the convex side of the tablespoon. Cool while preparing the other components.
3. Soak the gelatin in cold water for 10-15 minutes. Melt the swollen gelatin in a water bath or pulse in a microwave, allow to cool.
4. In the mixer bowl beat mascarpone with powdered sugar and lime zest. Add the cream, beat again until combined and thick. Add lime juice and beat again.
5. Divide the resulting mass into two equal parts. First mix half of the gelatine, chopped Basil and berries. Pour into a mold with a cooled base, quickly align the surface with a spatula or spoon. Send to the freezer for 1 hour or until solidification.
6. Again, heat the remaining gelatin for 10-15 minutes before use, allow to cool, mix in the remaining cheese mass. Pour into the mold with the first half frozen. Shake the mold slightly from side to side to level the surface. Refrigerate for 2 to 4 hours or until completely frozen.
7. Mix the strawberry liqueur, jam and lime juice in a medium-thick saucepan. Put on a small fire, let the jam melt, stirring occasionally, let the liquid boil. Add Basil and strawberries, remove from heat. Allow to cool completely. Remove the Basil.
8. Before serving, take out the cooled cake from the mold, place on a serving dish. Put the stewed strawberries, pour the syrup. Decorate with fresh berries and Basil leaves. Keep in the refrigerator.
