Cake «Winter strawberry» is perfect for the holiday table

It is tasty and light. When the table is full of food, then this dessert is just a find for dessert. It can be prepared with fruits and berries to taste: strawberries, kiwi, peach, apricot, currant …. Surprise your loved ones!)
Ingredients for sponge cake:
6 eggs;
300 g of sugar;

Cake «Winter strawberry» is perfect for the holiday table

6 tbsp. l cocoa;
200 g of flour;
2 tsp. baking powder.

For strawberry jelly:
1 bag of strawberry jelly (or 400 ml of strawberry juice or compote + 20 g of gelatin).

For milk jelly:
400 ml of milk;
20 g of gelatin;
2 tbsp. l Sahara;
2 tsp. vanilla sugar.

To soak the cakes:
300 g strawberries (fresh or frozen);
2 tbsp. l Sahara.

Prepare strawberry jelly. We take a bag of strawberry jelly and do everything as it is written on the packaging. If there is no ready-made jelly, pour 20 grams of gelatin with 200 grams of cold boiled water and set to swell for 20-30 minutes, after swelling, put the gelatin on a slow fire and with constant stirring we bring boil, but do not boil. Ready gelatin mix with strawberry juice or fruit compote. Pour the finished strawberry jelly into a form with a layer of 1 cm (I have a form with a diameter of 24 cm) and set it to full setting.
Cooking sponge cake. Whip eggs with sugar.
Add cocoa, mix.
Add the sifted flour and baking powder.
Knead the dough and spread into a greased form.
We put in the oven heated to 180 degrees for 20-25 minutes. Readiness is checked with a toothpick. Let us cool and lay out on the grill until it cools completely. A removable form in which we baked a biscuit, washed and dried. At the bottom of the form lay out food film.
Close the sides of the form and lift the ends of the film up. We do this to make it easier to shift the finished cake onto the dish, since our cake will be well soaked.
The cooled cake is divided into two parts.
Grind strawberries in a blender with sugar.
We put one cake back into a detachable form. Cakes richly soaked with chopped strawberries.
Spread one cake on another.

Cooking milk jelly. We take 20 grams of gelatin, pour 200 grams of cold boiled water and set to swell for 20-30 minutes, after swelling we put the gelatin on a slow fire and with constant stirring bring to a boil, but not boil.
Mix milk, sugar, vanilla sugar and stir until sugar is completely dissolved. In the finished mixture add gelatin. Stir well.
Frozen strawberry jelly cut into pieces.
Spread jelly pieces in the form of a biscuit.
Fill a part of milk jelly with a thin layer and put it in the fridge for 20-30 minutes so that the jelly will “grab” and not be absorbed into the soft cake layer.
Pour the remaining jelly and put the cake «Winter Strawberry» in the fridge until it solidifies.
We take the frozen cake out of the mold and transfer it to the dish with the help of a film that forms the bottom of the mold.
Here is a delicious and elegant cake. We decorate to your taste.
