Chicken in vegetable sauce with eggplant


Ingredients for 4 servings:
chicken thighs without bone 600 grams

Chicken in vegetable sauce with eggplant

cherry tomatoes 300 grams
garlic 3 clove
salt and sugar to taste

Preparation recipe:

Add the eggplant and fry, stirring, for another 2-3 minutes. Put garlic and tomatoes, cook for 1-2 minutes. Pour water or broth, bring to a boil. Add salt and sugar to taste. Return to the saucepan chicken. Bring to a boil and simmer on a small heat for 15 minutes. At the end, add chopped parsley and finely grated lemon zest. Serve with rice.
