Chocolate and marshmallow chocolate cake

 

A magnificent dessert with an inexpressibly delicate texture. Mousse literally melts in the mouth, just a chocolate cloud!

Instead of the base — cookies + butter, I made a chocolate biscuit without flour. In my opinion, this delicate biscuit is simply created for this aerated chocolate souffle, you get an inexpressible tenderness.

I highly recommend that you try this dessert, it’s very easy to prepare, but taste like in elite confectioneries.

INGREDIENTS
For chocolate biscuit without flour:
egg yolks
2 pcs.
egg whites
2 pcs.

50 grams
butter
20 grams
sugar
40 grams
For chocolate mousse:
marshmallow
200 g
cream 33-35%
300 g
cream 20%
100 g
chocolate black bitter
180 g
For caramelized bananas:
butter
20 grams
sugar, vanilla
15 grams
bananas

STEP 1
Prepare the chocolate biscuit without flour. Chocolate and butter melt in a water bath. Whisk the whipped with a pinch of salt until firm peaks.

STEP 2
Beetles beat up with sugar to whiteness, mix chocolate and butter.

STEP 3
Gently squeeze the squirrels.

STEP 4
Put the dough in a split form. At me a ring in diameter of 19 sm, instead of a bottom — a foil.

STEP 5
Bake in a preheated oven to 180 ° C for about 12 minutes. Allow the biscuit to cool, release from the mold, place on a tray or substrate, on which the cake will be assembled. I usually spread the biscuit upside down.

STEP 6
We cook caramelized bananas. Butter butter in a frying pan, pour vanilla sugar with natural vanilla, wait for the dissolution of grains of sugar. Instead of vanilla sugar, you can also use vanilla extract (1 tablespoon). Banana cut into slices, put in a frying pan.

STEP 7
Fry the banana slices literally for one and a half or two minutes on each side.

STEP 8
Put caramelized bananas on a chocolate biscuit. Put the biscuit in an adjustable cake ring, lay a side with a dense cake film. While preparing the mousse, the ring with the base can be placed in the freezer, then the mousse grab faster and does not leak.

We cook chocolate mousse. Marshmallow put in a deep bowl.

Warm the marshmallow in a microwave with pulses for 15-20 seconds, then pour 100 g of 20% cream, continue to warm the mass with short impulses, stirring occasionally.

Chocolate melt in a water bath.

STEP 12
Add the melted chocolate to the melted marshmallow mass and cream. Knead to homogeneity.

STEP 13
Cream 33% whisk until firm peaks.

STEP 14
Carefully mix the whipped cream with the chocolate mass.

STEP 15
In the end, you should get a smooth chocolate air mass.

Get the ring with the base from the freezer, pour the chocolate mousse on the base, smooth out. Put in the refrigerator for a couple of hours before solidification.

STEP 17
After hardening, remove the cake from the sides, decorate as desired, I have marshmallow and melted chocolate as an ornament.

Cut our cake and enjoy the incredibly delicate texture of the dessert. This is an option with a banana.
