Chocolate cake


Ingredients :

fat sour cream (30%) 150 grams

Preparation recipe:
Prepare the cake.
Sift flour with soda and salt. Leave to the side. Chocolate finely chop with a knife or break into pieces, put in a refractory bowl, add 100 g of sugar, 1 yolk and half of milk. Put on a water bath and with constant stirring bring to the dissolution of chocolate and sugar. The mixture should thicken slightly. Remove from the bath and set aside. Beat the butter with the remaining sugar until smooth.
Add the yolk and beat again. In three stages, add the flour mixture, alternating with the remaining milk and 50 ml of water (flour-milk-flour-water-flour). Add the chocolate mixture and beat until smooth. Beat the protein with a pinch of salt until hard peaks. Add to the dough and mix very carefully with movements from the bottom up. Form a diameter of 21-23 cm grease with butter. Pour the dough into the mold and put in a preheated oven to 170 degrees. Bake for about 30 minutes, until dry toothpick. Remove from the oven and let stand in the form of 15-20 minutes. Then remove the cake from the mold and cool completely.

Preparing the cream. Chocolate break into small pieces, put in a bowl and put on a water bath. Melt. Mix the powdered sugar and cocoa. Butter and cream cheese put in a bowl and beat with a mixer until smooth. Combine with the chocolate mixture and cocoa powder and beat again. Add sour cream, beat again. The cream is ready. It should be used immediately, because in the refrigerator it is very specific solidifies. Cake cut into 2 thinner. Put half of the dish and if desired impregnate with liquor or syrup. Spread with a layer of cream and cover the second half of the cake. We impregnate (also at will) and cover the top and sides of the cake with cream. Give to stand in the refrigerator for 2-3 hours.
