Chocolate meringue cake «Winter mood»

Delicate chocolate sponge cake is nicely combined with a cloud-like air glaze. Perhaps the recipe is not so simple to perform, but the result definitely overcomes these difficulties.

3 eggs 1.5 tbsp. sugar plus 1 tbsp. l 2 and 1/4 tbsp. flour of the highest grade 1/4 tsp. baking powder dough 3/4 tsp. soda 3/4 tbsp. cocoa powder plus 1 tbsp. l 2 tsp. instant coffee, optional 0.5 tsp. salts 1 and 1/4 tbsp. mayonnaise 1 and 1/3 of st. hot water

Special equipment:

2 egg whites 1/4 tsp. Tartar 1 and 1/3 of Art. sugar sand 1 tbsp. l corn syrup 0.5 tsp. vanilla 115 gr. dark chocolate for chips

Cooking according to the recipe:

Preheat oven to 175 ° C. Cover the bottom of the forms with parchment, carefully treat the walls and bottom with cooking spray (or a small amount of butter).

In a mixer bowl with a high-speed whisk installed, beat eggs with sugar at high speed until light and airy in texture of lemon color, 5-8 min.

Heat the water to a low boil, then turn off the heat.

Stir in the vanilla extract and beat for another 1 — 2 minutes. to cool the mixture a little. Cover with cling film before assembling the cake.

Cake assembly:

Gently turn the molds with the cake on a flat surface. Finely rub a little chocolate on the first layer of the cake. Then, spread approximately 1/3 of the glaze over the surface of the cake, allowing it to drip a little to the side.

Place the second shortcake directly over the first one and cover the top and sides of the cake with the remaining icing. Lavishly rub chocolate on top of the cake. This shavings create a pleasant texture, which emphasizes the softness of the cake.
