Coconut cake with lemon cream and BlackBerry dough

 

130 g of SL oil

50 g sugar

zest of 1 lemon

150 g flour

50 g coconut flakes

1 h/l baking powder

2-3 tbsp/liter of milk if necessary

2 eggs

300 ml cream average fat content

120 g of sugar

70 g corn starch

pinch of salt

juice of 2 lemons

40 g SL oil

400 g BlackBerry

mint leaves

For the dough, mix the butter and flour into the crumbs, add all the other ingredients and knead the soft dough. Mash it in the form of laid parchment. Send the form in a preheated oven to 170C for 20-30 minutes. Unparliamentary.

Meanwhile mix eggs with sugar, starch, salt until smooth. Pour in the cream and stir again. Cook on low heat until thick. Remove from the heat. Pour lemon juice and add oil. Stir until smooth. Put the cream on the cake.
