Duck with root vegetables and cherry wine sauce


Ingredients :
duck 2 pounds of star anise 5 PCs cinnamon stick 2 PCs. ground cinnamon 1 tsp pinch ground cloves salt and pepper to taste large potatoes 2 PCs carrots 2 pieces medium-large onion 1 piece of the tuber sweet potato (or normal potato) 1 small turnip pieces: 2 pieces head garlic 1 PC.

Duck with root vegetables and cherry wine sauce

Recipe: star Anise, cloves and ground cinnamon put in a mortar and RUB pestle (can be ground in a coffee grinder). Roots and onions cut into large pieces. Put in a baking dish, pour 2 tablespoons of vegetable oil, sprinkle with half of the spicy mixture, salt and pepper. Stir. Duck my under cold water, wipe dry. While the duck is baking, prepare the sauce. To do this, put in a bucket of cherry, sugar, cinnamon and star anise. Pour wine and put on fire. Bring to a boil and cook until the juices in the ladle will not get the consistency of the syrup, about 30 minutes. Cast from the ladle 3 tablespoons of syrup and set aside. The rest of the sauce keep warm until serving. After 2 hours from the beginning of baking, remove the mold from the oven. Carefully lift the foil and pour the juices released by the bird. Put in the form of peeled garlic, cover with foil again and remove in the oven for another hour and a half. After this time, finally remove the foil from the mold and lubricate the duck with cherry syrup. Send in the oven, increase the temperature to 220 degrees and bake the duck until the skin becomes rosy, about 15 minutes. Remove the duck from the oven, put on a dish and let stand for 10 minutes. Cut up the finished carcass and serve with cherry sauce.
