Enchiladas with chicken

 

Enchiladas is a traditional Mexican dish, is a tortilla with filling, wrapped in a roll and baked with spicy sauce. The filling of your choice – chicken, meat, vegetables, mushrooms.

Ingredients:

Onion (100g): 1 piece.
Garlic cloves: 4 pieces;
Chilli: 2 pieces;

Enchiladas with chicken

Tomatoes in own juice: 400 grams;
Vegetable oil: 80 ml;
Sol: 1.5 tsp;
Sugar: 10 grams;
Ground black pepper: ½ tsp;
Chicken meat: 800 grams;
Chili pepper ground: ½ tsp;
Zira (cumin): 1 tsp;
Oregano: 1 tsp;
The dried coriander (cilantro): 1 tsp;
Cheddar: 300 grams (can be replaced by any other semi-grade )
Cilantro (coriander): 100 grams;
Tortilla: 5 PCs

Preparation:

1. Let’s start with the sauce. For him peel the onions and garlic from the chili peppers remove seeds and finely it all Nachinaem.

2. In a frying pan over medium heat heated vegetable oil and fry the chopped vegetables for about five minutes, stir. Then add to them canned tomatoes, cut them not very finely. Add salt, sugar and black pepper to taste, mix and warm for 5-7 minutes. The sauce is ready.

3. In another pan already on high heat also dissolve a little vegetable oil and fry in it the minced chicken, after 10-15 minutes of frying all the liquid from the meat evaporates and it started to brown. In this moment we fall asleep to it ground red pepper, salt to taste, oregano, coriander and cumin. And you can just take the spice mixture for Mexican dishes. Fry for another 5 minutes until it will turn brown – ready.
4. Left to RUB cheese on a coarse grater and chop the cilantro.

5. You can start the build. Oven included 180 degrees. Take a baking dish and pour on the bottom half of our sauce.
6. Heat the tortillas slightly in the microwave so they become more elastic. Take a tortilla, on one half, spread 2-3 tablespoons roasted chicken meat, grated cheese on it (do not regret, the more cheese the better! but let him a little left over to sprinkle on top) on top and sprinkle chopped cilantro.

7. Gently roll the tortilla into a tube and spread on sauce seam side down. And so 5 times (or however many you can fit tubes).
8. When all enchilada in the form, and fill them on top of the remaining sauce, sprinkle with cheese and cilantro.
