Honey coffee cake

 

The tastes of honey and coffee are mutually reinforcing and in perfect harmony with each other. It only remotely resembles the usual honey cake, so if you want to try the recipe, consider this point. The cake is perfectly impregnated, dense, does not fall apart, you can even eat with your hands. If you like this, then this cake may like you.

So, the dough:
120 gr. strong black coffee
300 gr. honey’s
3 tablespoons cognac
2 eggs

Honey coffee cake

2 tablespoons vegetable oil
135 gr. brown sugar
335 gr. sorrow
2 tablespoons baking powder
1/2 tsp cinnamon
80 gr. ground almonds

Cream:
300 gr. milk
5 tsp instant coffee (I used Nescafe Espresso)
3 yolks, or 52 gr.
100 gr. the sahara
20 gr. starch’s
150 gr. oils
50 gr. powdered sugar
vanilla essence

To prepare the dough, mix coffee with honey, bring to a boil, immediately remove from the stove, allow to cool slightly, add brandy. Beat the eggs with sugar and butter until frothy. In another bowl, mix flour with baking powder, cinnamon and almonds. In turn, add to the egg mixture flour mixture and honey. Fill the oiled dough form (diameter 20 cm), bake at 180 degrees for about 70 minutes.

Now Pro cream: 290 gr. heat milk in a saucepan, dissolve coffee in it, remove from the stove, cover and let stand for 10 minutes.
Mix the egg yolks with 10 grams. milk, sugar and starch, beat well.
Gradually pour the yolk mass into the milk, return the saucepan to the stove, cook for 7 minutes at an average temperature (on my plate 6 of 9), stirring with a whisk until thick. Give the cream to cool completely, covering with cling film or baking paper (so as not to form a film). Soft butter beat with powdered sugar, adding vanilla essence. Connect with the cooled cream and beat at low speed.

Cake cut into 5 equal, grease them, as well as the sides of the cake, cream. I decorated with chocolates in the form of coffee beans (Mokkabohnen, Dr. Oetker), and the sides and top of the cake combed with a scraper with a zigzag edge.
