Leek cream soup



Leek-3 PCs. (about 700 g),
Green peas (frozen) — 1 package (400 g),
Celery stem-2 stems,
Carrots (average) — 1 PC – ,

Leek cream soup

Water-2 liters,
Salt, ground black pepper-to taste,
Extra virgin olive oil-1 teaspoon per serving,
Vegetable oil-for frying.


The leeks will separate into two parts – white and green. Rinse thoroughly under running water and dry. Peel the carrots and leave the whole, celery and the green part of the leek cut into small pieces. Pour all the vegetables except white onions, cold water and put to cook. When the liquid boils, remove the foam and add a little salt.

While the vegetables are cooked, the white part of leek cut into half rings and fry in vegetable oil until ready. After 30 minutes from the broth, remove the carrots (for the soup, we do not need it, because if it is mashed, it will spoil the soft green color of the dish). Fall asleep in a pot of green peas, boil it until soft, add the fried leek.

After that, the vegetables with broth, grind with a blender until smooth. Season with black pepper and season with salt if necessary. Pour the soup on plates and pour the extra virgin olive oil on top.
