sugar — 30-50 grams (according to your taste);
milk — 500 milliliters;

flour — 80 grams;
starch — 80 grams;
vegetable oil — 40 grams;

Lightly beat eggs with sugar, salt, add a little milk (50 — 100 grams) and again stir everything. This is so that when we add dry ingredients, it was convenient for us to mix the whisk.
Add the sifted flour and starch (4 tablespoons each with a slide) into the egg-milk mass and mix well. The dough is thick at the moment, like a pancake. In such a mass, the loose ingredients are mixed very well and the lumps are broken.
Pour in the vegetable oil and mix until it is evenly distributed throughout the test.
Milk in small portions and each time stir well. The dough will look rather liquid (slightly thicker than milk), but do not worry, this should be the consistency for thin pancakes.
Let’s leave the dough for at least 20-30 minutes, and preferably 1.5-2 hours. During this time the gluten of wheat swells, the dough becomes more elastic, and the pancakes will not tear when baked.
Before you bake the first pancake, you need to grease the frying pan with vegetable oil and warm it well. Follow fry in a dry frying pan.
Be sure to shake the dough well before each pancake. Because the starch has the property of settling down. Only then pour the dough on the frying pan, when the ladle will feel that it is completely homogeneous.
Due to the fact that we have enough liquid dough, the pancake will turn out to be very thin. I pour a ladle about 50 grams per pan with a diameter of 20 centimeters. This is to give you a little guidance in the amount of dough for a thin pancake.
Fry the starched pancakes on both sides, turning over with a spatula or hands, gently prying one edge with a knife. Start turning over when you notice that the edges begin to blush.
If the dough is thick enough, then add milk, if too liquid — thicken with flour. A little tip is how to add flour to the batter. If you just add it, you can form lumps that are difficult to break even with a whisk. To do this, take a small bowl, pour some dough into it, and already add flour to it and stir well. If this mass is too thick, then dilute it with a liquid batter. If the density turned out to be like a pancake, then boldly connect to the main and mix well. No lumps!
