Ingredients:
pears (ripe) — 3 pcs.
Bitter chocolate — 100 g
butter — 60g
sugar — 130 g
Eggs — 2 pcs.
almond flour — 60 g
lemon juice — 1 tbsp
baking powder — 10 g
Cognac — 2 tsp

Preparation:
1. Ripe sweet pears clean, remove core.
2. Cook the pears 7-10 minutes on low heat, adding water to 50 grams of sugar and lemon juice.
3. Dark chocolate melted in a water bath with butter.
4. Beat 2 protein with a pinch of salt, gradually adding about 50 grams of sugar. Beat until thick texture of the protein mass.
5. In a separate container whip 2 yolks and 30 g sugar. Sugar is added to taste. I do not like sugary-sweet pastries, so this count of sugar for me was enough.
