Pilaf Shadi-Beksky

 

INGREDIENTS:
● 800 g of rice
● 800 g of meat
● 800 g carrots

1. Pilaf Shadi-Beksky

● 250 g of quince
● 300 g of fat or oil
● 150 g of onion
● salt, spices — to taste

PREPARATION:
Cut the meat (mutton, beef) into slices, like on a shish kebab, onion — rings, carrots — cubes by 1x1x1 cm. Take a quince, taken in equal quantity with carrots, cut into cubes 2х2х2 cm and put in warm water, otherwise it under the influence of oxygen it will darken.

In a cauldron with a ball-shaped bottom, melt the mutton lard or vegetable oil, fry the onion in it to brown, put the pieces of meat and fry to light crust, put the carrot cubes, fry with the meat until half-ready, pour the water in which quinces have stood, enter salt and spices and simmer on low heat for 50-60 minutes.

Mix the quince cubes with the washed rice and put it evenly in the dirvak, pour the same water in which the quince was soaked, and boil with strong boiling until the moisture evaporates and the rice swells completely. Cover with a lid for 25 minutes. When ready, mix the pilaf, put the slide on the dish and serve it on the table.
