Ingredients:

Sponge:
butter-150 gr. (room temperature),
sugar-150 gr.,
flour-150 gr.,
eggs — 3 PCs.,
baking dough — 1 tsp.,

Poppy-caramel cake with cottage cheese and cream.

vanilla sugar-1/2 tsp,

Salted caramel:
sugar-260 gr.,
salted butter-100 gr.,
cream (33% and more) — 240 gr.,
large sea salt — 1 pinch.

Poppy-seed filling:
Sugar-150 gr.,
Vanilla sugar-1/2 tsp,
Mak-300 gr.,
Milk-120 ml.,
Raisins-100 gr.,
Nuts-100 gr.,
Lemon zest-1 tsp (can be excluded),
Water-50 ml.

Cream and curd cream:
cream cheese-200 gr.,
soft cottage cheese-250 gr.,
butter-110 gr.,
powdered sugar-to taste,
vanilla sugar-1 pack.

— How to cook:

Sponge:
Softened butter beat with sugar until creamy. One by one add the eggs, beat well. Add vanilla sugar and mix. Sift flour with baking powder, add to the oil-egg mixture, mix. Preheat oven to 180 degrees. Divide the dough into 3 equal parts, and pour into prepared molds (covered with parchment), bake for approximately 25-30 minutes until dry kindling. Allow the cakes to cool completely. As impregnation, the author used orange juice.

Salted caramel:
In a saucepan, melt the sugar, adding parts of it. It should melt completely and become brown, the main thing with this case is not to overdo it. Now add butter, stirring constantly, then hot cream. The cream must be really hot, otherwise, the infusion them in caramel, can happen violent reaction (you can get scalded). Boil the caramel until 103°C. Remove from heat and add coarse salt. Caramel should be allowed to cool completely.

Poppy-seed filling:
Raisins soak in warm water to a little swell. Nuts cut into small pieces. Remove the zest from the lemon with a fine grater.
Mac grind, you can do it with a coffee grinder, pour milk, add sugar (the amount of sugar can be reduced, focus on personal preferences), vanilla sugar, zest, raisins and nuts. The mass is thoroughly mixed, then heated. Set aside the poppy seed mixture for 30 minutes to Mature.

Cream and curd cream:
First, beat the softened butter with powdered sugar and vanilla sugar until fluffy, then stir in cream cheese and cottage cheese. If the cheese is mild flavor, pre-wipe it through a sieve. Beat at low speed.

To assemble the cake:
On the soaked cake put salted caramel, then poppy seed filling, and then a layer of cream and cottage cheese cream. Cover with the next cake. Repeat previous steps.
The top of the cake can be covered with butter cream on Swiss meringue or cream of cream cheese. In this case, the second option.
