Quail wrapped in bacon, stuffed olives

 

Ingredients (for 2-4 servings):

Quail — 4 PCs – ,
Olives stuffed with lemon-2 cans,
Smoked bacon-8 slices,
Fresh parsley-1 bunch,

Salt, ground black pepper-to taste,
Vegetable oil-for frying and lubrication.

How to cook quail:

Wash the quail, dry with a paper towel, RUB with salt and black pepper and quickly fry in well-heated vegetable oil until Golden brown (3-4 minutes on each side). Olives cut into rings and mix with finely chopped parsley.

Stuff the quail with the resulting mass, how the edges of the cavity with toothpicks, so that the filling does not fall out. Wrap each carcass with two strips of bacon, using a silicone brush, grease the birds with vegetable oil, put on a baking sheet and bake in a preheated 200 degree oven for 20 minutes.

If you do not plan to treat these quail children, then after you pull the birds out of the oven, you can pour them with heated red semi-sweet wine with the addition of nutmeg (2 tablespoons of wine on the carcass), cover with foil or lid and let stand for 5-10 minutes.
