Risotto with vegetables (low-calorie dish)

For risotto it is important to take a round rice: it contains a lot of starch. Thanks to this, the texture of the dish turns velvety.

Ingredients
bulb — 1 pc.
garlic — 1 clove
small courgettes — 3 pcs.
hard cheese — 100 g
olive oil — 2 tbsp. l.

Risotto with vegetables (low-calorie dish)

vegetable broth — 1 l
round grain rice — 250 g
frozen green peas and corn — 100 grams of salt, ground black pepper
Preparation:

Peel onion and finely chop garlic. Squash to wash, dry and cut into large cubes.

In the saucepan, heat the olive oil and, stirring, brown the onions with garlic. Add rice and fry until transparent.

Pour 100 ml of hot broth and simmer for 5 minutes. Then add the remaining broth and simmer for 15 minutes.

Put zucchini, peas and corn (do not thaw!) Stew on a small fire under the lid 5 min. Add salt and pepper to taste.

Grate the cheese on a large grater. Risotto remove from heat and disintegrate in portions. Sprinkle with grated cheese and serve. You can decorate with branches of basil.
