Strawberry tart with custard

 

Ingredients per form 24-26 cm:
Dough
wheat flour 200 grams
cold butter 115 grams

Strawberry tart with custard

salt 1/4 tsp
pinch of sugar
cold water 2 tablespoons

Cream

yolks from large eggs (C-0) 3 PCs.
sugar 60 grams
wheat flour 40 grams
milk 250 ml.
butter 50 grams
vanilla essence 1 tsp
white chocolate 40 grams

For top
strawberry 400 grams
bag of transparent jelly for cake (optional) 1 PC.

Preparation recipe:

Prepare the dough. To do this, put in a bowl of blender flour, salt, sugar and diced cold oil. Chop to get fat crumbs. Pour in the water and knead the dough as quickly as possible. Knead too long can not, otherwise the oil will melt and the dough will turn out wooden. Form a dough ball, wrap in plastic wrap and put in the refrigerator for 30-40 minutes. While the dough is cooled, prepare the custard. Whisk the yolks with the sugar white. Add the flour and beat again. Bring to a boil milk.

A thin stream pour into the egg mixture, without stopping to beat. Pour into a clean ladle and put on medium heat. Cook, stirring constantly with a whisk until the mixture thickens. Remove the bucket from the fire. Add a couple of cubes of butter, stirring well after each addition. Then add vanilla essence and finely chopped chocolate and stir until it dissolves. Shift the cream into a bowl. Cover the surface with cling film and put the bowl in the refrigerator. The cooled dough is removed from the film and rolled into a layer 4-5 mm thick.
Put in the form (do not need to lubricate), press your fingers to the sides. Surplus is removed. Put the foil sheet on the surface of the dough, pour the cargo on top (beans, peas or rice). Put in a preheated 180 degree oven and bake for 10 minutes. Remove, remove the foil with the load, prick the bottom with a fork. Return the form to the oven and bake for another 10 minutes. Again, remove and cool. Cut the strawberries into quarters. In the cooled base spread the cooled custard and level. Put the berries over the cream and cover them with a layer of quick-gelling jelly. This point can be skipped, but with gelatin tart will keep the appearance longer.
We give Tartu to stand in the refrigerator for a couple of hours, then serve.
