Tarte Tatin with quince

 

If you got not very soft quince fruits, be sure to boil them in sugar syrup. If the quince is soft, this stage can be skipped.

quince-3-4 pieces – ,

Tarte Tatin with quince

sugar – 100 g.
Ingredients for the syrup:

sugar-100 g,
water-250 ml,
cinnamon-1-2 sticks.

How to cook tarte Tatin with quince:

Wash the quince, clean, remove the core and cut into slices. From sugar and water, cook the syrup, put the chopped quince and cinnamon in it. Boil the quince until soft, then gently remove from the syrup.

Sugar pour a smooth layer on a dry pan. Heat until the sugar melts and turns Golden. Quickly pour the resulting caramel on the bottom of the baking dish. Put the quince slices into the caramel. Roll out the puff pastry not very thinly and cover the quince with dough. Chop the dough with a fork and put in a preheated oven to 180-200 degrees. Bake until the dough is Golden, about 30 minutes. Form with a pie, remove from the oven and cover with a dish. Carefully flip the tarte Tatin onto a plate. Serve with ice cream or whipped cream.
