biscuit bake in two portions, separately

Vanilla sponge cake:


double portion:
— 8 eggs
— 2 tablespoons of sugar
— 280 gr. sorrow
— 2 tsp baking powder
— 6 tbsp of boiling water;
— 6 tablespoons sunflower oil
— vanilla essence or vanilla (I used essence)

Eggs with sugar beat with a mixer for about 15 minutes (what would the mass increased 3 times). Mix flour with baking powder, add gently to the egg mass. Then add boiling water, stir, then add oil and stir. At the end, add the flavor/vanilla.

Pour the dough into a form lined with parchment and bake in a preheated oven to 180 degrees. Time the prescription is written for 25-30 minutes, but better for the willingness to follow through with splinter as soon as it will come out dry finish. It is advisable to turn off the oven and leave the biscuit with a little ajar door, for 30-40 minutes, then remove.

Impregnation for biscuit:

— 1 tablespoon of water
— 4 tablespoons of sugar
— rum essence — a few drops
Boil water, add sugar. give 7-10 minutes to boil. add essence and remove from heat. Unparliamentary.

Yogurt and cream mousse:

1.5 PT double cream (30%)
— 3 pack. natural (not drinking!) yogurt on 120 gr. «ACTIVIA», a strawberry (my yogurt was quite delicious, two large «glass» (for grams is more than 360, so you need to increase the amount of gelatin in proportion).
— powdered sugar to taste
— 3 tablespoons of gelatin (I used a leaf proportional to the yogurt-cream mass)
— 150 ml of cold water.

Cream beat with a mixer with powdered sugar. In a bowl, put the yogurt and gently introduce the whipped cream.
Gelatin fill with water for 10-15 minutes. Dial in a saucepan with water and bring to the boil and leave to bloom the gelatin in a water bath. When melted, allow to cool.
When the gelatin cools down, gently introduce it into the yogurt-cream mass. You can manually, you can mixer (ideal), but not at high speed.


The biscuits are cut into the required number of cakes.
Soak in the cooled sugar syrup.
Spread a small layer of yoghurt and cream mousse, spread a layer of chopped wafers kbuntu, again covered with a layer of mousse, then again strawberries, and top with mousse. Cover with the next cake and repeat all the same.

Ready to put the cake for 2-3 hours in refrigerator, preferably overnight for impregnation.
Decorate on your own and serve.

I prepared this cake twice — and by double the number of products and 1/2. For a celebration or a family holiday it is better to make a big cake, for home tea — 1/2, but also from 1/2 the cake turns out rather big (in the photo). If you alternate the layers of biscuit and mousse, then it is not necessary to impregnate-at night the cakes will be impregnated and so, and if the bottom of the biscuit is on top of the mousse, it is desirable to impregnate. In any case-at discretion. And the first and the second time the cake was high, so I laid the perimeter of the form sheets of folders («Corner»), and mousse with added gelatin separately kept in the refrigerator, stirring to gelatin grabbed a little, and then poured the mousse into the form. Strawberry «drowned» in the mousse-then the cut looks beautiful. Taste-great, quite easy and summer cake for any holiday or event!
